Curried Shrimp with Tomatoes
(Serves 4-5)
2 Tbsp. coconut oil
1/2 onion, chopped
3+ cloves garlic, minced
2 Tbsp. curry
2 cans diced tomatoes
1/2 cup coconut milk
1 cup chicken broth
2 lbs shrimp
- Heat coconut oil in a large skillet. Add chopped onion and cook until onions are translucent.
- Add garlic, curry, diced tomatoes, coconut milk, and broth and mix thoroughly.
- Add in shrimp and simmer for 8 minutes, or until shrimp is cooked through.
